Just a collection of what I've been eating for breakfast. When I first started whole 30 I was worried the most about breakfast. I don't do well with eggs. My throat gets tight and mucousy and I am left clearing my throat for 30-45 minutes after eating eggs.
So I googled "whole 30 egg free breakfast ideas" and I got a few ideas.
The best idea I got was "let go of your idea of what a breakfast *should* be".
Some people on whole30 tend to call their meals "meal 1, meal 2, and meal 3" so they could just start thinking of food in a whole new way- with no preconceived notions of "cereal for breakfast, sandwich for lunch, meat and potatoes for dinner". They have a new template.
So- I look at breakfast as a meal with no rules. Other than the whole 30 rules of palm size protein, two thumbs of fat, and the rest is veggies- or in season fruit in moderation, there are no rules as to what foods *should* be present.
I do like a little sautéed greens at breakfast. This morning I couldn't find the bok choy so I just grabbed some sugar snap peas and ate them raw. And the cortido batch is done fermenting which is DELISH with any form of sausage(Apple chicken, or otherwise).
One thing I had to make peace with is making a mess in the morning kitchen. My morning kitchen is so clean. The kids do a fabulous job at cleaning it after dinner and back when eggs were ok I could whip up an easy breakfast with frozen peppers and onions and frozen chopped spinach- I'd just make a veggie egg scramble. But now there is usually peeling and chopping invovled. So the cutting board is out, and my santoku knife, and peeler. So the mess begins in the morning and spans the day off and on instead of beginning at lunch time. But breakfast is so yummy and nourishing and lasts me from about 7:30 to noon easy that I have made peace with the early mess.
