Day 12 was a sunday and we had to pack up the camp. I made A batch of chicken thighs, sautéed some baby bok choy, and sweet potato. I ate half of the chicken thighs and save the rest for lunch. I squeezed lime on the chicken and some got on the sweet potato: a happy accident! it tasted so good!
we packed up camp, tidied the camper, and headed south to the 199 junction then east following 199. we pulled off 199 at cave junction and made our way back to the Oregon caves- a national monument and an all around neat place to visit.
the road getting there proved to be car-sick making. i can pretty much guarantee car sickness if two of the following three situations are happening; sunlight flashing through trees, winding roads, and hunger. it was almost lunch time and sunny so all three were rocking it in my belly. about the only way to avoid this for me is to cover my eyes with a light blocking material- my hands work great in a pinch but by the time i realized what was happening, it was too late.
we parked and i made lunch. it has been difficult- making the little kids meals while i am hungry and cannot snack or taste the food. and i was seriously about to get sick if i didn't eat something soon so i told Chris i needed to make my lunch first this time. everyone was cool with it.
i heated up 2 of the leftover thighs and some more sweet potato(i seriously could eat sweet potato at every meal). i threw it on spinach and topped it with pecans, coconut oil and lime juice. salt and pepper and nom.
older kids and Chris went caving while john and alice helped me explore the surrounding areas. there was a gift shop and a beautiful water fountain/fall, some trails, and lots of wildlife.
we saw two deer, a crazy caterpillar, a lizard, a few butterflies, and some smart crows. we sat and shared olives on patio chairs by the water fall. the spelunkers returned and we loaded up the camper and headed back to 199 eastbound for Grant's Pass.
in grant's pass we met up with a family i've been in touch with over the last few months. the mom is 30 weeks and is expecting a baby like jedidiah. the baby's heart and brain are very similar to his. complicating things further, they are still recovering from losing their 2 year old suddenly last summer in a drowning accident while on vacation- so pray for their journey. they ooze grace and beauty but how else can they carry on with living without God's grace and the prayers of friends?
we drove north of grant's pass on I-5 for an hour and then stopped for something to eat. Chris told me he aimed to take the kids out to eat and wanted to make sure i was covered in regards to a meal so i bought a steak- yum! he stopped at KFC- and just got take out instead. we parked on the curb beside KFC and i sautéed sliced brussels sprouts in coconut oil and separately did mushrooms and onions in coconut oil- all while browning the steak. it took forever to cook the steak- i had what is called the "vent" turned on high but it's so poorly functioning, i think whoever chose the vent must think grilled cheese is the extent of cooking. i ended up slicing the steak into strips to get it cooked faster.
i do love fried chicken.
i kept urging the steak to cook faster all while watching everyone crunch into their crispy chicken skin and tear at the juicy white meat.
finally it was done and i savored every bite sitting on the grass beside the camper.
we loaded back up and moved along up I-5 through eugene, portland, and north through lower washington. chris drove into the night and we made home at 3:30 am.
day 13 was memorial day and a day for relaxing and unwinding after the trip. but not for the kids. they unloaded the camper.
for breakfast i took a handful of baby shrimp and sautéed them in the skillet with some coconut oil and some cumin and chili powder, cayenne and paprika- oh and salt. i found some wilted romaine and picked through for the few remaining healthy leaves. i also made up some sweet potatoes. to top it off i made a quick tomato, peach, lime juice and cilantro simple pico de gallo(no onion).
we relaxed- like i said. i took alice for a walk and john for a bike and met a woman around the corner who just moved from san bernardino via north dakota. she has a little girl alice's age and a little boy john's age. i look forward to getting together with her. i need to share my findings on what's called "seattle freeze" or "seattly nICE". maybe i'll do a post on friendship:-).
back from the walk alice messed her pants really bad and i had to throw her in the bath after she ate lunch. she fell asleep in the bath! chris helped me transfer her into a towel and she transferred into the bed quickly with just a little complaint and then snores. yes- she still snores. it's what remains of her stridor i guess.
so my arm was kind of was stuck under her in bed. i was hungry for lunch but she was so warm i fell asleep. i woke, very hungry, around 2:30.
i made some awful ground beef type chili thing and threw it on some lettuce with the leftovers from the pickle jar(the carrots and peppers). it tasted...um...like something.
moving on.
we had swim practice tonight and i took alice for a dip. she was so adorable running and squealing through the club in her swim suit and lifevest. she loves swimming so much! john would have joined us but he crashed on my bedroom floor five minutes before leaving. after practice the kids had grilled burgers and french fries. i was going to join in eating the burgers but someone found the tilapia defrosting in the camper freezer and so i decided not to waste it- plus i'm starting to feel not satisfied with ground beef. it's got mass, but it doesn't fill me- or leave me satisfied for long enough between meals.
i rubbed some cumin, chili powder, cayenne, and paprika into the tilapia along with some coconut oil. i wrapped a couple with foil and chris grilled them. they turned out delicious! side dish was roasted brussels sprouts and spiralized sweet potato. i cooked them both together in a pie pan next to the kids fries in the oven. i think it was missing some nuts. i need to get out shopping today!
i ate four or five chocolate covered cherries and felt such guilt! i felt i had let myself down after working so hard to keep clean! and then i woke up.
i guess i'm in the stage of the whole 30 where you have the weird food dreams- the ones the book talked about.
but otherwise i feel good and ready to keep eating clean and doing my body good.
