oh, aaaand i made working carrot banana oat breakfast muffins with plantain flour. i'm way more happy with plantain flour than i was with coconut flour. it works alot like wheat flour in that it requires about the same amount of flour and doesn't require an obscene amount of eggs.
i would share the recipe but i couldn't find measuring utensils so it was all eyeballed.
and the kids, energized by the muffins, swept the now bikeless porch floor. nice.
now i want my brother-in-law to come build a smaller version of this grotto he built in the opposite corner of the bikes.
so so so pretty.
and he isn't even catholic!
he asked me if i had heard of a thing called lourdes.
"yes."
"some lady wants me to build it in her backyard."
so i gave him a book on lourdes. and the song of bernardette video. the cool thing about this grotto is that during it's construction a secret miracle was worked. i hope to share more about this miracle later, when i am at liberty to. for now pray that the miracle continues to grace our lives.

So great to see you blogging again! Would you be willing to share where and/or how you got (or made if you are super-industrious!) plantain flour? I've seen coconut flour and almond flour - both with mixed reviews from users - in the store and wondered how it would be to bake with for gf goods. Hope everyone is well; I miss seeing you!
