it looks like it is working!
i put 1.5 tablespoons raw black chia seeds in a litre of 'bucha along with some strawberry jelly(made with sugar) and let it ferment over night. i panicked a bit at first, thinking i put too much seed in, because they increase in size- acquiring this gelatinous exo-layer. but now i see that i could've added maybe another tablespoon? in another day or two i'll give it a taste. if it is a good mix of mostly vinegar and some sweet i'll chuck it in the fridge(and hide it in the far far back).
