Friday = fish. At every meal!
Breakfast- smoked salmon, sautéed baby bok Choy, roasted flaked sweet potato and hazelnuts. Roasting hazelnuts in coconut oil is oh so good! And after i peeled the sweet potato i continued using the peeler and just peeled giant flakes so they turned out to be thin slices that would cook faster than bigger pieces.
Lunch-salmon steak crumbled (and deboned!!) atop a giant mixed greens salad- guacamole and roasted flaked beets and hazelnuts. Balsamic vinegar and olive oil.
Dinner- I roasted a bunch of tilapia filets and set two aside for me before I added taco seasoning for the others. Mine had cumin and cili powder lightly shaken onto it. More guac- this time heavily garlic'd. And Henry's awesome salsa- he wants to open a Mexican restaurant and call it " jalapeño business". Funny guy. Again- roasted sweet potatoes. I had my fish tacos folded up in romaine lettuce. Very good combo.
