scratch scratch chili

this is just to say that my kitchen smells awesome! i made chicken
broth for two days in the crock pot using a garlic and herb chicken
carcass(also scratch made- so scratch the rosemary bush is in my
backyard). and for the last half day i added two whole carrots and
two whole celery stalks. it also had a dash of vinegar in there to
pull all the good stuff from the bones- yeah calcium!!!
then last night i soaked the beans- 1 lb kidney beans and 1 lb
pintos. just 30 minute ago i drained the beans and threw them in a
giant pot. then i drained the chicken broth in on top of it,
catching all the solids in a sieve. i caramelized a yellow onion and
a green pepper and threw them into the giant pot along with 7 fat
strips of bacon chopped up good and small. this is all simmering
now. i just need to add the ground beef and special spices, but it
already smells so goooooood! and i only just now stopped to ask
myself "now, why is it you and your pregnant self are cooking chili in
august?"
hey- i am pregnant! i deserve to have cravings, even if they make no
climatological sense.

Sounds wonderful! I am not pregnant right now and I just made chili last night and my family ate every last bit in the pot! Enjoy it :-)

I'm not much for chili with meat in it, but I absolutely love your words; "climatological sense" ~ Just can't stop chuckling... :))

we did enjoy the chili. i wish i had cooked the beans a bit longer, i like when they are all mushy and add to the thickness of it.
i thought my family was weird for putting beans in chili. i mean, alot of people, so i think- just use meat, which would make me sad and feeling lonely for beans. isn't that what God made red kidney beans for?
